Abstract: The cold rooms for the storage of chicken meat for human consumption are controlled systems to maintain the cold to guarantee the product's quality and take care of food safety. This article presents a system for monitoring and classifying the temperature of a cold room and the level of ice generation to keep the cold room in the right conditions. Through IoT, an application for mobile devices is developed that allows the remote visualization of cold room data. This system uses an ESP32 board, two sensors, a DHT 22 sensor for temperature control, and an ultrasonic sensor for ice level control. Communication is accomplished through the ThingSpeak platform. Based on the data obtained and the experience of the professionals, a classifier for the support vector machine is designed to determine the normal and abnormal state of the plant's operation. The results indicate the correct functioning of the proposal and the performance of the classifier of 84%. Using these IoT tools facilitates meat production processes, maintaining product quality and warning of possible failures in the cold room.
